Broiled Fresh Peaches with Buttered Rum Sauce

INGREDIENTS

2 tablespoons dark rum
3 peaches, halved, pitted
1/4 cup firmly packed brown sugar

1/2 cup firmly packed brown sugar
1/4 cup butter
1/4 cup heavy cream
2 tablespoons dark rum
3/4 teaspoon cinnamon
Ice cream

PREPARATION

Drizzle 2 tablespoons rum on peaches and sprinkle with 1/4 cup brown sugar. Let rest 10 minutes for peaches to absorb rum and sugar. Meanwhile, in 2-quart saucepan on Wolf cooktop over high heat, bring 1/2 cup brown sugar and butter to a boil to dissolve sugar. Add cream, rum and cinnamon. Reduce heat and simmer about 5 minutes until thick. While simmering sauce, put peaches into a broiler safe dish.

Position oven rack to position 5. Place peaches in oven. Heat Wolf electric oven on BROIL 1. Broil peaches for 8 to 12 minutes or until caramelized. Serve peaches with sauce over ice cream.
