Pulled Chicken


5 pounds boneless, skinless chicken thigh meat
1/4 cup canola oil
1/2 medium onion, finely diced
1/2 jalapeno pepper, seeded and finely diced
1 tablespoon Cajun seasoning
1 1/2 teaspoon salt
3/4 teaspoon freshly ground black pepper
1 cup BBQ sauce
1 tablespoon chipotle Tabasco


In large braising pan on Wolf cooktop over high heat, cook the chicken with the onion, jalapeno, Cajun seasoning, salt and pepper. Stir frequently for 10 minutes. Turn heat down to medium and cook for an additional 10 minutes. Reduce heat, and simmer for about an hour, stirring often to break up chicken. When liquid has all but cooked off, add BBQ sauce and chipotle Tabasco. Adjust seasoning with additional salt or Tabasco.
