Turkey Chipotle Chili


2 pounds ground turkey
1 small onion, diced
1 small green bell pepper, diced
1 small red bell pepper, diced
1/2 tablespoon minced garlic
3/4 cup red wine
6 cups tomato sauce
2 cups chicken stock
4 cups canned black beans, drained & rinsed well
2 cups white hominy
1 1/2 tablespoons minced chipotle in adobo
1 teaspoon ancho chili powder
1 teaspoon chipotle Tabasco
2 teaspoons cumin
2 teaspoons dried oregano
1 tablespoon cocoa powder
2 tablespoon creamy peanut butter


Brown turkey and the onions together over medium heat in a large stock pot. When onions are soft add the peppers and garlic. Continue to cook 4-5 minutes until turkey is browned. Deglaze with the wine and add the rest of the ingredients except the hominy. Bring to a simmer and cover. Stir occasionally and cook 20-30 minutes. Uncover and add hominy. Cook for an additional 10-15 minutes, stirring occasionally.

Makes approximately 4 quarts.
