Classic and platinum stainless steel finishes can be cleaned using a soft, non-abrasive stainless steel cleaner like Signature Polish. Apply with a soft 100% lint free cloth. Carbon stainless steel can be cleaned with mild soap and water. To bring out the natural luster of all three finishes, lightly wipe the surface with a water dampened microfiber cloth, followed by a dry polishing chamois. Always follow the direction of the grain, and for better results keep the cloth in continuous contact with the metal. Signature Polish can be ordered on their website at

It should be noted that while no specific bakeware is required, the size, shape and finish of your bakeware affects the cooking time. The oven door should remain closed in the both broil modes. Unlike most conventional ovens Wolf ovens are specifically designed to allow for a closed door broil.
One of the factors affecting optimum cooking results is the level of rack placement in the oven. Rack position 1 is closest to the bottom and position 6 is closest to the top. When using one rack for roasting meats, place the rack in position 1, 2 or 3. When using two or three racks, separate each rack with at least one position between them.
No. Do not place cookware, aluminum foil, a bake stone or any other material on the oven floor or side walls. Doing so will cosmetically damage the porcelain but will not affect the functionality of the product. The porcelain can be replaced but is not covered under the Wolf warranty.
The most important step in maintaining your oven is to wipe out the interior whenever spills occur. When the oven cools, clean any splatters and spills as soon as possible. Do not allow food with a high sugar or acid content, such as milk, tomatoes, sauerkraut, fruit juices or pie filling, to remain on any porcelain surface. Resistant to most stains, but not totally impervious to damage, salt and some cooking liquids may pit and stain the porcelain surface. Always remove these spills quickly to maintain the porcelains original luster.
Self clean takes four hours to complete the cycle. Three hours of self cleaning followed by one hour of cool down. The oven is heated in graduated steps to a preset high temperature. During this process, food soil is burned off, leaving some white ash residue. Set in combination with delayed start feature, cleaning of the oven can be programmed to start and stop while you sleep. For safety purposes, the door automatically locks during cleaning and unlocks when the cavity has cooled completely. Should you change your mind and stop the mode after beginning self-clean mode, the door will still remain locked until the temperature inside has cooled to below 300°F (150°C). Before beginning self clean it is important to remove all racks and rack guides. After self clean has finished and the oven is cool. Wipe out any residual ash and replace rack guides and racks.
Yes. The adjustments will vary from recipe to recipe but a good rule of thumb is to drop the temperature 15-20 degrees and reduce cook time by 5 min for every 30 minutes of the original recipe’s directions.
The temperature probe monitors doneness by measuring the internal temperature of food without the need of opening the oven door. It’s a convenient and accurate way to achieve perfect results regardless of the type, cut or weight of the food.
To ensure all residual oil from the manufacturing process
has been removed, each oven must go through the following
procedure.
- Clean oven thoroughly with hot water and a mild detergent.
Rinse and dry with a soft cloth.
- Turn on ventilation. Some smoke and odor is normal.
- Touch or turn knob to CONVECTION ROAST (ROAST for
27" lower oven) and adjust temperature to 550°F (290°C)
for one hour.
- Touch OFF (turn knob for professional model) and allow
oven to cool with the door closed.
Don’t worry, nothing is missing. Wolf electric ovens have a hidden bake element under the bottom of the oven. This allows for more even heat in the oven cavity as well as making the oven easier to clean.
