1 vanilla bean, split lengthwise

This recipe was developed exclusively for the Legacy Wolf Convection Steam Oven with Button Controls.



For the sauce:

  1. In 1 1/2-quart saucepan on Wolf cooktop over medium heat, place 1/4 cup sugar.
  2. Continue to heat 3 minutes or until sugar turns light brown.
  3. Gradually pour in orange juice into pan and allow to reduce in half.
  4. Remove and pour evenly into four 6-ounce ramekin dishes.
  5. Set aside.

Flans:

  1. In 2-quart saucepan over medium heat, place cream, remaining sugar and vanilla bean.
  2. Bring to a simmer, stirring constantly.
  3. Whisk eggs in 2-quart bowl.
  4. Slowly pour cream into eggs, a little at a time, beating after each addition.
  5. Pour mixture through a fine strainer evenly into the dishes over the orange sauce.
  6. Place dishes on perforated pan.
  7. Carefully slide on rack position 1.
  8. Close oven door.
  9. Set oven to Recipes #R9.
  10. Push OK.
  11. After the oven chimes to indicate baking time is over, remove from oven.
  12. Allow to cool completely.
  13. Chill in Sub-Zero refrigerator for at least 2 hours.
  14. To serve, run a knife around the edge of each dish.
  15. Turn flans upside down onto each plate and pour any remaining sauce from dish over the top of flan.
