1 (3.5 to 4-pound) chicken

1 head garlic, split horizontally

1 lemon, split horizontally

3 sprigs fresh thyme

1/4 cup extra virgin olive oil

Preparation Method

  1. Position oven rack to rack position 3. Preheat Wolf electric oven in ROAST at 375°F.
  2. Rub salt and pepper on the inside and outside skin of chicken.
  3. Place garlic, lemon and thyme inside chicken cavity.
  4. Loosely tie legs together. Rub oil over entire chicken.
  5. Place chicken on roasting rack over broiler pan.
  6. When oven is preheated, place in oven. Insert temperature probe in center of chicken thigh and set for 180°F.
  7. Chicken will take 50 to 65 minutes to reach internal temperature. Remove from oven and allow to stand for 15 minutes.
