The Wolf fryer module features a large 2 gallon capacity tub and a 5qt oil capacity. This large capacity allows for the oil to remain at a safe level below the unit’s surface.

Use a soft, nonabrasive stainless steel cleaner like Signature Polish (see side note) and apply with a soft lint-free cloth. To bring out the natural luster, lightly wipe the surface with a water-dampened microfiber cloth, followed with a dry microfiber cloth. All work should follow the same grain direction as the finish. Best results are obtained by keeping the cloth in continuous contact with the metal. For best results, wipe up spills and spatters as they occur and immediately after the module has cooled. While the type of oil used in the fryer won’t affect its performance, it should be noted that particular types of oil have different cooking properties. The “smoke point” of an oil is an important factor in determining which oil to use for which frying task. The higher the smoke point, the higher the temperature the oil can be heated to without affecting its flavor. Peanut and Safflower oil have two of the highest smoking points, around 450° F(230° C), while pure olive oil has one of the lowest at 280° F(140° C).

The Wolf fryer module provides a simple way of storing either your large basket or two small baskets when not in use. For storage, first collapse the fryer basket handles. To collapse the handles, pull the handle apart just above the basket and rotate the handle inward. Place basket(s) into the fryer basin with handles collapsed. Place the low-profile lid on top to give a clean look.
