A Wolf Dual Fuel range is the combination of a gas rangetop and electric oven(s). Most cooks prefer gas burners because they offer more control to their electric counterparts, which stay hot even when you don’t want them to. An electric convection oven has proven to be the most effective method of maintaining consistent, even heat in an oven cavity, allowing multiple vessels to be cooked at the same time with no hot spots or the need to rotate. The Wolf Dual Fuel range, provides the best of both worlds in one single product.

This range is shipped with a temperature probe, and broiling pan.
- The temperature probe monitors doneness by measuring the internal temperature of food without the need of opening the oven door. It’s a convenient and accurate way to achieve perfect results regardless of the type, cut or weight of the food.
The two-piece broiler pan packaged with your oven allows fat to drip away from the food and from the intense radiant heat produced by the broiler. As the fat drips away into the pan below, it’s contained, reducing spattering, smoking and risk of fire. The slots in the top of the broiler pan also allow for heat to move below and around the food being cooked for even doneness.
Cooking with convection allows air movement around the oven cavity and the food that is being cooked. In turn, this speeds up cook times and promotes browning.
Wolf electric ovens feature two convection fans which attach to two heating elements at the back of the oven cavity. These fans, spin in the opposite direction maintain even heat throughout the oven cavity which eliminate hot spots. Pans of cookies no longer have to be rotated, the turkey comes out evenly browned and the holiday ham’s skin is perfectly crisp. The Wolf dual convection system takes your recipes to the next level.
The heat can be precisely controlled at any increment with the Wolf dual-stacked sealed burner. After lighting, the knob can be turned counterclockwise to select any level of temperature between high and low. To switch to simmer, turn the burner knob counterclockwise to the LOW setting; you will feel a stop in the knob rotation. Push in on the knob, continuing to turn counterclockwise. This moves the flame to the second tier. Now, select any variation within the simmer setting – high through low.
To reach a temperature of 375 degrees on convection mode, it will take the Wolf oven approximately 20 minutes to preheat. While other brands may claim faster preheating times, it’s important to understand the difference between basic preheating and the full cavity preheating that Wolf ovens employ. With basic preheating, the air temperature in the oven is raised and the preheat temperature is reached very quickly. However, immediately after the preheat is complete, the oven temperature begins to drop because the racks, walls, as well as the bottom and top of the oven start to absorb the heat due to the fact they are not at the same temperature as the air inside the oven. Full cavity preheating brings the temperature of the oven components, as well as the air in the oven up to the same temperature. Assuring that once the preheat temperature is reached, it remains constant, with no drop off.

There are 10 cooking modes. The cooking modes are—bake, roast, broil, convection bake, convection roast, convection broil, convection, bake stone (accessory required), dehydrate (accessory required) and proof
Bake
- Utilizing 10% of the heat from the broiler element and 90% of the heat from the hidden bake element, this mode is best for single-rack cooking. Biscuits, cinnamon rolls, cakes and brownies turn out beautifully as the majority of the heat from below helps them rise as they are gently browned from above. The temperature probe may be used in this mode.
Roast
- Utilizing 25% of the heat from the broiler element and 75 % of the heat from the hidden bake element, this mode is designed especially for roasting less tender cuts of meat that should be covered, such as chuck roasts, lamb shanks, pot roasts and stew meat. The temperature probe may be used in this mode.
Broil
- Utilizing 100% of the heat from above, the broiler element is used to conduct an intense, radiant heat that browns one side of the food at a time. The temperature probe cannot be used with this mode.
Convection bake
- Utilizing 90% of the heat from the dual convection fans and 10 % of the heat from the hidden bake element, this mode is ideal for baking pies and tarts. The temperature probe may be used in this mode.
Convection roast
- Utilizing 25 % of the heat from the broiler element and 75% of the heat from the dual convection fans, this combination gently browns the exterior and seals in juices, making it perfect for roasting tender cuts of beef, lamb, pork and poultry. The temperature probe may be used in this mode.
Convection broil
- Utilizing 100% of the heat from above, the broiler element is used to conduct an intense radiant heat from the top element that browns and sears the surface of the food while the dual convection fans circulate hot air around the food. This mode shortens broiling times for thicker cuts of meat, fish and poultry. The temperature probe cannot be used with this mode.
Convection
- Utilizing 100% of the heat from the dual convection fans, the heated air moves throughout the entire oven cavity. Uniform air movement makes it possible to multi-level rack cook in this mode. The heat is cycled on and off to maintain the temperature, resulting in evenly browned food. The temperature probe may be used in this mode.
Bake stone mode
- Utilizing heat from all elements, this mode is specially designed to produce the hot oven environment necessary for baking on a ceramic stone. A “brick oven” effect is achieved, creating the perfect environment for pizzas, flatbreads, and hearth breads.
Dehydrate mode
- Utilizing a low constant heat from the dual convection fans this mode allows slowly drying out food for preservation and other cooking uses like infusions. Use the convection mode for this feature. The Wolf accessory dehydration racks (not included with the range) are required for this mode. This feature is suitable for drying a variety of fruits, vegetables, herbs and meat strips.
Proof mode
- Utilizing a low constant heat from a combination of the broiler element, dual convection fans and the hidden bake elements, this mode is ideal for proofing, or rising bread dough. Use the bake mode for this feature.
Yes, it is possible to customize the burner configuration of your Wolf range. Depending on the size of your range, dual stacked sealed burners can be combined with a char broiler, griddle, double griddle or French top, allowing you to choose the right combination for your needs. Customize your range even further with optional accessory S-gates or wok grate. Please note, choosing your rangetop configuration must be done at the time of purchase and are not designed to be reconfigured at a later date.
You must provide either a gas supply line of 3/4" rigid pipe or if local codes permit, a new CSA design certified, 3' (.9 m) long, 1/2" or 3/4" ID flexible metal appliance connector to this range from the gas supply line. A smaller size pipe on long runs may result in insufficient gas supply.

Yes, the legs and casters allow for up to 2 1/8” height adjustment. Combined with the optional front leg extensions, available in sizes 3 1/4", 3 3/4", 4 1/4" and 4 3/4", and rear caster covers, your kitchen maintains its look and feel. These accessories are available through your dealer.
