Shaved Fennel, Arugula and Tangerine Salad

Preparation:

To Make Dressing:
Mix mustard and vinegar. Slowly whisk in oil to combine. Add garlic. Season with salt and pepper to taste. Set aside.

To Serve:
Toss fennel, tangerine slices, and arugula together with dressing.
Shave Parmesan with vegetable peeler to top salad.  Serve immediately.

Makes 6 to 8 servings.
