Convection Steam Oven Beef Brisket

Use the method below for preparing 3- to 5-pound briskets. For a larger brisket, cut it in half for best results.

Rubbed Brisket in the Convection Steam Oven
1 (3-5 pounds) beef brisket
Choice of rub, if desired

  1. Season liberally with the preferred dry rub for the brisket.
  2. Place the brisket in 9" x 13" pan.
  3. Cover with plastic wrap and refrigerate overnight or at least 2 hours.
  4. Uncover pan and place in the oven on wire rack in position 2.
  5. Add 4 cups water to pan.
  6. Turn oven on to Convection Steam mode at 250°F.
  7. Convection Steam for 2 hours and check for tenderness. Check to see if the meat is tender. If not, return to the oven and cook an additional 15 minutes.
