Convection Steam Oven Convection Steam Mode Higher Than 445°F (230°C)


  • Convection Steam Mode in the Convection Steam Oven (CSO)
  • Recipe calls for higher temp than 445 or 230 degrees


If a recipe calls for temperatures higher than 445°F (230°C):

  • Note that the CSO can reduce cooking times or temperatures by up to 25% in convection steam mode. Try reducing the recipe's temperature by 25% and monitoring results.
  • Steam is much more efficient at transferring heat energy than dry air.
  • Additionally, super-heated steam has different properties than normal steam, resulting in its browning, crisping effect on food.
  • Consequently, 445 degrees in the Convection Steam Oven (CSO) is able to bake bread with excellent results.
