M Series Oven Proof Mode

Answer:

M Series Ovens use a combination of broil and bake elements to heat and balance the air to maintain temperature in Proof Mode. This mode is ideal for proofing, or rising, bread dough.

For Best Results:

  • No need to preheat for Proof Mode.
  • Allow at least 1" between edge of pan and walls of oven.
  • Limit frequent door openings to prevent losing heat and lengthening proofing time.
  • Proof bread until dough has doubled in bulk.
  • The time it takes for the dough to double in volume varies. Consult the recipe for guidelines.

To to keep the air moist inside the oven cavity, Wolf recommends placing a shallow pan with 1-3 cups (.2-.7 L) of boiling hot water on rack position 1. Place the dough on rack position 3.

  • Dough does not need to be covered if using this method.

The oven does not allow the temperature to be set above 110°F (45°C) in Proof Mode.

  • If the oven is too hot, the oven door should be opened to allow the oven to cool down below 120°F (50°C) to prevent destroying the yeast.

Setting Proof Mode:

  1. Touch QUICK START, then select PROOF. 
    • For professional model, turn selector knob to MORE, then select PROOF on the control panel.
  2. Touch START to select preset temperature. 
    • To change temperature, touch or use slide bar to select desired temperature, then touch START. 
    • For professional model, turn selector knob to adjust temperature.
  3. Touch OFF to end mode. For professional model, turn selector knob to OFF.
